How hard is it to swap the spark plugs on a 850i e31?

It is not very hard at all to swap the plugs on a e31. Some are a little hard to get to but if you reach properly, you can manage. There should be a sparkplug tool in your toolkit that you can use to remove them.
When you purchase the new plugs, I would make sure that you only use copper spark plugs. Platinum plugs in these engines just wont cut it...
